Winemaking: Manual harvest. Gentle membrane pressing with inert gas. Secondary fermentation is done with Charmat method.
Tasting notes: This sparkling wine has a greenish hue and fresh aroma of citrus fruits. There is a fine mousse, bringing forth the fruity freshness (citrus, pear) of the wine.
Food pairing: Chicken with creole, trout with almonds, salmon steak.
Serving temperature: 5°C to 8°C
